Commercial description:

Saison du Fermier is the harmony of new and old. It is robust and has the paler color of modern Saisons, yet it is balanced with the brightness, depth and rustic character of the wild Brettanomyces and Lactobacillus found on our family’s Missouri farm. This farmhouse ale was fermented in and aged in wine barrels for several months. 7% ABV

Side Project Abricot du Fermier & Peche du Fermier Bottle Release Oct. 4

Side Project Saison du FermierThere they are, folks – straight from Side Project Brewing. Abricot du Fermier and Peche du Fermier are both slated to drop today, October 4 at the Perennial Artisan Ales tasting room when doors open at noon. Each of these are a fruited spin on their outstanding Chardonnay barrel-fermented saison, one with apricots and another packed with peaches, respectively. Expect a line as per usual.

  • Bottle limit will be determined when doors open based on turnout

Side Project Saison du Fermier Batch 2 Release June 7

Side-Project-Saison-du-FermierHeads up! It’s that time again. Side Project is dropping the 2nd batch of Saison du Fermier at the Perennial Artisan Ales tasting room on Saturday, June 7 at 12pm. Yes, you might have heard there was (or was not) a locals release for this beer already this week, but the proper fiasco is going down this weekend. Get your farmhouse on.

  • $20 per 750mL bottle
  • Limit will be determined based on turnout in the morning

Side Project Pulling Nails Blend 1 Coming Soon

Side-Project-Pulling-NailsSt. Louis’ Side Project Brewing is gearing up for another bottle release, featuring the first installment in a new series, Pulling Nails. Dreamt up by Brewmaster Cory King, each of these blended beers will “explore the art of blending to create beers with extraordinary depth, complexity and balance.”

Blend #1 is bottled up and ready to go, so keep your eyes and ears tuned to the Side Project Brewing Twitter and Facebook accounts for a release announcement.

UPDATE 1/30: Pulling Nails Blend #1 and a new batch of Le Saisonnier will both be released on Saturday, February 1 at noon in the Perennial tasting room.

The blend:

  • Spontaneous Wild (Lambic-style, native microflora from my family’s farm) – aged 25 months in French Oak White Wine (bright citric acid, mushroomy, musty)
  • Flanders Red – aged 18 months in American Oak Chambourcin Barrels (tart candy, robust oak, big acid, very light acetic)
  • Saison du Fermier – aged 9 months in American Oak Chardonnay Barrels (citrus and orchard fruit, billowy, delicate)
  • Saison de Rouge – aged 6 months in American Oak Chambourcin Barrels (Amarillo hopped, pear notes, 100% house Brett)

King has also heard the clamoring for Side Project stemware, which will be released at one of the area’s top bottle shops, The Wine & Cheese Place. Tickets for a special release and tasting party sold out immediately but additional glasses can be ordered here.

Side Project Brewing Announces First Bottle Release

Side Project BrewingThe brainchild of Cory King, current Head Brewer at Perennial Artisan Ales, is ready for lift off on Saturday, September 28 at noon. Dedicated to 100% barrel-aged beers produced in small batches, Side Project Brewing experiments with open fermentation, barrel fermentation and spontaneous fermentation to create a variety of American wild ales, saisons, Flanders ales, imperial stouts, barleywines and more.

All brewing and barrel-aging currently takes places at Perennial, which will hold the inaugural bottle release in September. Three unique beers will be available in 750mL bottles, with at least six more on the way. Read the full Side Project story and press release here.

The beers:

The Origin 14.3% ABV

The Origin is a blend of Imperial Stout, Black Oatwine and Baltic Porter that was aged for 20 months in a Rittenhouse Rye barrel with Madagascar Vanilla Beans. It is our Batch #1, Barrel #1 and our first release. It is never to be brewed again.

Saison du Fermier 7% ABV

Saison du Fermier is a Chardonnay barrel-fermented Saison. It is the harmony of new and old. It is robust and has the paler color of modern Saisons, yet it is balanced with the brightness, depth and rustic character of Brettanomyces and Lactobacillus found in traditional Saisons. This farmhouse ale was fermented in and aged in wine barrels for several months.

Brett Project #1 6% ABV

Our Brett Project series is the exploration of how single strains of Brettanomyces ferment and condition a Saison malt bill. Each Brett Project will be fermented in and aged in wine barrels with a different Brettanomyces strain to showcase its unique characteristics. Brett Project #1 showcases a Brettanomyces strain isolated by our friend at BKYeast from Cantillon.
